holy cow: homemade brie + mushroom burgers / by lana pribic

Seriously... If you're going to indulge in a burger, at least make sure it's amazing. This is one of the best burgers I've ever had...So good that I'm blogging about it while in Copenhagen. Here's how to make it: 

the burger: 
  • 500 grams of ground beef
  • 1/2 large onion, diced in fairly large chucks
  • salt and pepper
  • chili pepper flakes 

for the toppings:
  • brie cheese in slices
  • mushrooms in slices 
  • 1/2 large onion, sliced 

Mix the ground beef and diced onion together with your hands. Add salt, pepper, and chili flakes to your own taste. Make sure it's all mixed in really nicely. Let it sit in the fridge for about an hour if you have the time.

Roll the ground beef into patties and grill them with olive oil (or on a barbecue). Start to sauté the mushrooms and onions in olive oil, adding salt and pepper to taste. When the patty is cooked on one side, flip it over and place the brie cheese on the patty so that it can melt and be fabulous. When everything is ready, put a big slab of the onions and mushrooms on top of the patty. 

So easy, so good. Serve on whatever bun you'd like. We ate it bunless, just because we couldn't find a damn bakery... But it was still so delicious and spur of the moment. Lastly: don't forget your salad, as my mom would say.
