golden beet summer salad / by lana pribic

I made this for a dinner party for my parents and all the grown ups loved it. I recommend it with a side of freshly grilled salmon and white wine. Yum! I love summer feasting. I imagine that adding couscous or quinoa would turn this side dish into a delicious veg meal.

Golden Beet Summer Salad
Barely adapted from Women's Health Magazine, July/August 2014 issue
Serves 4-6 as a side

4 golden beets
4 radishes
4 carrots
4 oz soft goat cheese
3 tbls toasted pecan pieces
handful of parsley

Maple-Dijon Dressing:
3 tbls fresh lemon juice
3 tbls olive oil
3 tbls pure maple syrup
1 tbls dijon mustard

Using a mandolin, slice the beets, radishes, and carrots thinly. Toss all together in a bowl with the parsley and pecans, reserving some of each. Whisk together all dressing ingredients and pour into bowl, covering the veggies with it.

Place everything on a serving dish and sprinkle the salad with goat cheese and left over pecans and parsley.
